Ingredients:

  • ½ cup dried elderberries (or 1 cup fresh elderberries)
  • 2 cups water
  • 1 cinnamon stick (or 1 tsp ground cinnamon)
  • 1 tsp fresh ginger, grated (or ½ tsp ground ginger)
  • 1 tsp dried cloves (optional)
  • 1 cup raw honey (preferably local)

Instructions:

  1. Simmer Berries: In a saucepan, combine elderberries, water, and spices (cinnamon, ginger, cloves). Bring to a boil, then reduce heat and simmer for about 30 minutes until the liquid reduces by roughly half. This concentrates the beneficial compounds.
  2. Mash & Strain: Remove from heat and mash the berries in the liquid to release all their juice. Pour the mixture through a fine strainer or cheesecloth into a clean bowl or jar, pressing the berries to extract every drop. Discard the used berries.
  3. Add Honey: Let the elderberry liquid cool until it’s warm (not hot) to touch. Stir in the raw honey and mix well (adding honey to very hot liquid can destroy its nutrients). The honey not only sweetens the syrup but also acts as a natural preservative and cough soother.
  4. Bottle and Store: Pour the syrup into a sterilized jar or bottle and cap it tightly. Store in the refrigerator for up to 2 months. You can also freeze portions for longer storage.
  5. Dosage: For immune support, take 1 teaspoon daily for kids over 2 years (1 tablespoon for adults). If sick, you can take this dose up to 3 times a day. Do not give to infants under 1 year old, since it contains honey.
